Sweet n Crunchy Chicken Salad
Lunch
This healthy, high fiber sandwich is a Miltons favorite. Use light mayonnaise and chicken breast meat to reduce the fat and calories. A serving of fruit in every sandwich is an added bonus!

Ingredients:

8 slices of Miltons Healthy Multi-Grain Bread
1 pound chicken, cooked and cubed
1/2 cup chopped celery
1/2 cup chopped apple
1/4 cup halved seedless grapes
3 tablespoons sliced almonds
1 teaspoon ground cinnamon
4 tablespoons of light mayonnaise
4 leaves of romaine lettuce

Instructions:
In a mixing bowl, combine chicken, celery, apple, grapes, almonds, cinnamon and mayonnaise. Spread chicken salad on 4 slices of Miltons Healthy Multi-Grain Bread. Top with romaine lettuce cover with remaining slices to form a sandwich. Serve.
