Tangy Tuna Salad Sandwich

Cook Time 5 Minutes Serves 2


4 slices of Milton's Whole Wheat Bread
1 diced tomato
4 leaves of Romaine Lettuce
1/2 small jar of artichoke hearts
2 cans of albacore tuna
3 tablespoons mayonnaise
3 tablespoons capers or chopped kalamata olives
1/2 diced red onion
3 tablespoons shredded parmesan cheese
Salt and Pepper


Mix diced tomato, tuna, artichoke hearts (separated), capers, onion, parmesan cheese, and mayonnaise together in a bowl. Add more mayonnaise if mixture seems too dry. Season with salt and pepper to taste. Put a generous amount of tuna salad on two pieces of bread. Top with lettuce and another slice of bread to make a sandwich.
