First, slice the cucumber into thin slices. Next, cut the salmon into smaller pieces (about 2 inch by 4 inch strips). This recipe can be assembled in two ways. The easy way is to spread the cream cheese directly onto the cracker, then top with 2 slices of cucumber, one strip of salmon folded in half, and top with a sprig of dill. Another way is the fancier way pictured above where we layered the cucumber, salmon, dill and then added a swirl of cream cheese on top. You can either fill a pastry bag with cream cheese to achieve the swirl, or make your own by filling a sandwich bag and snipping of one corner. As an additional optional garnish, you can finish things off with a dash of lemon pepper or a few capers for a tangy twist. Serve immediately.
