Sausage & Red Pepper Sandwich

Cook Time 20 Minutes Serves 4

Ingredients

8 slices of Milton's Wheat Bran Classics Bread
2 tablespoons olive oil
4 smoked Andouille Sausage, sliced into 1/4" pieces
2 red bell peppers, halved and sliced into one inch pieces
1 red onion, halved, then sliced thinly
2 garlic cloves, finely chopped
1/4 c parsley, chopped

Directions

In large skillet heat oil and briefly sear the sausages on each side until they are just browned and warmed through (smoked sausages are fully cooked, so you don't have to worry about cooking the meat). Remove sausages and pour off all but 2T fat. In same skillet add the bell peppers and onion and saute on high heat until they are softened, about 8 minutes. Don't be afraid to let a few brown. Add the garlic and a generous amount of salt and pepper. Continue to saute for 2 more minutes. Remove from heat and stir in the parsley. Toast the bread. Place sausage pieces on four slices of bread and spoon some of the pepper saute over the top of each. Finish with another slice of bread and eat as a sandwich.
