Healthy Breakfast Casserole

Cook Time 60 Minutes Serves 8

Ingredients

4 cups Milton's Multi-Grain Bread , cubed
1 1/2 cups shredded Swiss cheese
8 eggs, lightly beaten or 2 cups egg substitute
3 cups fat free (skim) milk
1/4 cup chopped scallions (use green and white parts)
1/2 teaspoon salt
1/4 teaspoon Worcestershire sauce
1/4 cup diced roasted red bell pepper
4 slices cooked turkey bacon, chopped
1 tablespoon chopped fresh basil
Pepper to taste

Directions

Grease 9" x12" baking dish. Arrange bread cubes on the bottom of dish and sprinkle with cheese. Mix together eggs, milk, salt and Worcestershire sauce. Add scallions, red pepper, turkey bacon and basil to egg mixture. Pour mixture over bread and cheese. Season with pepper to taste. Cover and refrigerate for 1-2 hours or overnight Heat oven to 325 F. Bake 50-60 minutes until top is golden and eggs are set. Cut in eight squares and serve. Experiment with vegetables such as sliced mushrooms and tomatoes for extra nutrition.
