Miltons Healthy Breakfast Casserole

Take the stress out of entertaining and keep your family healthy with this do-ahead casserole. Use the egg substitute for a lower cholesterol version and experiment with vegetables such as sliced mushrooms and tomatoes for extra nutrition.

Ingredients:

4 cups Miltons Healthy Multi-Grain Bread, cubed
1 1/2 cups shredded Swiss cheese
8 eggs, lightly beaten or 2 cups egg substitute
3 cups fat free (skim) milk
3/4 cup chopped scallions (use green and white parts)
1/2 teaspoon salt
3/4 teaspoon Worcestershire sauce
1/4 cup diced roasted red bell pepper
4 slices cooked turkey bacon, chopped
1 tablespoon chopped fresh basil
Pepper to taste

Instructions:
Grease 9 x 12 baking dish. Arrange bread cubes on the bottom of dish and sprinkle with cheese. Mix together eggs, milk, salt and Worcestershire sauce. Add scallions, red pepper, turkey bacon and basil to egg mixture. Pour mixture over bread and cheese. Season with pepper to taste. Cover and refrigerate for 1-2 hours or over night. Heat oven to 325. Bake 50-60 minutes until top is golden and eggs are set. Cut in eight squares and serve.
