Low Fat Egg Salad Sandwich

This tasty egg salad sandwich is low in calories and fat as well as high in fiber. By eliminating the egg yolks and high fat mayonnaise and with the addition of vegetables this sandwich is perfect for anyone on a heart healthy diet.

Ingredients:

12 slices Miltons Healthy Multi-Grain Bread
8 large hard cooked eggs (use only 2 whole eggs and 6 egg whites)
1/2 cup chopped celery
1/3 cup chopped green onions
1/3 cup chopped red bell pepper
2 tablespoon light mayonnaise
2 tablespoons non-fat sour cream
1 teaspoon dijon-style mustard
Salt and pepper

Instructions:
Peel eggs; discard 6 egg yolks (you will be using 2 whole eggs and 6 egg whites). In a medium-size bowl, chop the eggs up. Add celery, green onions, bell pepper, mayonnaise, sour cream, dijon mustard, salt and pepper; stir until well mixed. Spread evenly on 6 bread slices. Top with additional bread slice and serve with a side of fruit.
